View Achari Soya ChaapMalai Soya Chaap is the vegetarian counterpart to our chicken malai tikka. Soya chaap is marinated in cashew paste, cream and gentle spices, then grilled in the clay oven until the outside sets to a pale gold and the inside stays soft, rich and completely mild.
Soya chaap is a soy protein wrapped around a skewer — dense, high in protein and, crucially, able to soak up a marinade the way paneer never quite does. In the malai version there is no chilli at all. What comes through is cashew, cream, cardamom and the char from the tandoor.
It is the dish we use to convince sceptical guests that a vegetarian tandoori plate can be as satisfying as a meat one. It is also the item vegetarians order when they want something creamy without ordering another paneer gravy.
The chaap is scored so the marinade reaches inside rather than sitting on the surface, then left in a mixture of cashew paste, fresh cream, hung yogurt, ginger, garlic and mild spice built on white pepper and cardamom. It goes into the tandoor on a moderate flame — hot enough for colour, gentle enough that the cream does not split — and comes out with lemon and chaat masala.
Butter naan or garlic naan and a mint chutney are all it needs. The whole plate stays mild, which suits families and guests avoiding spice.
