Paneer tikka, malai soya chaap, hara kebab, dahi ke kebab and tandoori bharwa aloo come out of the same clay oven on one platter, with seasonal vegetables marinated alongside them.
Vegetarian guests in Niagara Falls are used to being offered one paneer dish and little else. This platter puts five distinct tandoori preparations on a single plate — charred paneer, creamy soya chaap, a herb-green kebab, a soft yogurt kebab and a stuffed potato — each with its own marinade and its own texture.
It works as a shared starter for a mixed table, as a full vegetarian meal for two with naan, and as the centrepiece of a vegetarian catering order. It is also the plate we recommend to guests who eat vegetarian occasionally and want to see what the tandoor can actually do without meat.
Each item is prepared on its own line. Paneer is marinated in spiced yogurt with peppers and onion; the malai soya chaap goes into cashew and cream; the hara kebab is built on spinach, coriander and green chilli; the dahi ke kebab is hung yogurt bound and crisped; and the bharwa aloo is a potato hollowed and stuffed before it goes into the oven. Everything meets for the first time on the platter, seconds before it reaches your table.
Garlic naan, butter naan or a stuffed cheese naan turns the platter into a full meal. Mint chutney and sliced onion come with it as standard.
Tables making a night of it add one shared vegetarian curry — a paneer gravy or a dal makhani — plus rice, and the platter becomes the starter rather than the main.
