View Malai Soya ChaapAchari Soya Chaap takes the spices that go into an Indian pickle jar — mustard seed, fennel, nigella, fenugreek and chilli — and puts them to work as a tandoori marinade. Bound with yogurt and mustard oil, it gives the chaap a sharp, tangy, unmistakably smoky edge.
“Achari” means pickled, and this is the most assertive vegetarian plate we serve. Where the malai version is creamy and quiet, this one is sour, hot and pungent from the mustard oil. It is not a subtle dish and it is not trying to be.
Guests who normally find vegetarian starters underwhelming tend to order this one, and guests who like their food sharp order it instead of a curry entirely. Paired with a cold drink and a naan, it holds its own as a full plate.
The chaap is scored and left in a marinade of hung yogurt, mustard oil and a whole-spice achari blend — mustard seed, fennel, nigella, fenugreek and dried red chilli — with ginger, garlic and lemon. Mustard oil is heated first to take the raw bite off it before it goes in. The skewers hit the tandoor hot so the spices toast against the surface, and the plate comes out with sliced onion and lemon.
A raita, a plain naan or a portion of saffron basmati rice gives the tang somewhere to land. Many tables order it next to a malai soya chaap for exactly that reason.
