Fresh Basa is cut into thick pieces, marinated in lemon, yogurt, ginger, garlic and carom seed, then grilled in the clay oven just long enough to take on smoke without going dry.
Fish is the hardest thing to cook in a tandoor. Too long and it falls off the skewer; too short and the marinade never sets. We use Basa because it holds together under that heat and stays mild enough that the spices and lemon come forward instead of a strong fish flavour.
It is a lighter option than the chicken tikka and considerably lighter than a cream curry, which makes it a favourite with guests who want a full Indian meal without the weight. If you are eating late after a night on Clifton Hill, this is the plate we point you at.
The Basa is trimmed and marinated for a short window — long enough for the lemon, yogurt, ginger and garlic to season it, short enough that the acid does not start breaking down the flesh. Carom seed and a measured amount of chilli go in for warmth. The pieces are skewered and set high in the tandoor so they cook through on residual heat rather than direct flame, then come out with a squeeze of lemon and chaat masala.
Fish tikka wants acidity, not gravy. Sliced onion, extra lemon and a sharp mint chutney are the right partners, with a plain or garlic naan if you want something to fold it into.
Pair it with a vegetable Hakka noodle or a bowl of rice instead of a heavy curry. It is one of the few ways to eat a full plate at our table and still leave feeling light.
