It is the plate we recommend for a first visit, for a group that cannot agree, and for anyone who wants a protein-heavy meal without a heavy gravy. Order it as a shared starter for four, or as a full meal for two with naan on the side.
Each component is marinated separately and rested overnight. The tandoori chicken takes a yogurt, ginger, garlic and Kashmiri chilli marinade; the malai tikka goes into cream cheese, cashew and mild spice; the basil tikka picks up fresh herbs and green chilli; and the seekh kebab is hand-pressed minced chicken with onion and garam masala. Nothing is pre-cooked — the skewers go into the clay oven when the order lands, which is why the platter arrives with real char on the edges and still juicy inside.
Garlic naan or butter naan straight from the tandoor is the natural partner. Add a mint chutney and a green salad and the platter becomes a full meal without a single curry on the table.
